A Leap of Faith – From Cocktails to Juice!

Paolo Scagliarini had been working in the bar industry for 20 years until one day his health was no longer on his side and he knew he had to make a change. The answer came in the form of pressing healthy fruits and vegetables.  So Paolo took a leap of faith and went from cocktails to juice!

I was so happy when I found this cute juice bar just right outside my apartment here in Bologna as I was really missing my fresh juice and something healthy that did not consist of bread for a quick meal.

I was lucky to meet the owner that day and went back to learn more about his venture into the juice world and his thoughts on health here in Italy. As you may know I am here with my latest project “Project Healthy in Italy”. Read more about it here

From Cocktails to Juice in Bologna. 

Paolo had beeing working in the bar industry for 20 years and starting having health issues as the focus had been on serving alcohol and chips due to his job. After a while he decided he was ready for a different focus and started learning more about vegeterian, vegan and raw food.

He started noticing a change in both his attitude and his body when implementing this kind of food and juice to his diet. He also added a slow juicer to his existing bar selling more and more fresh juice.

1 1/2 ago he decided to take a leap of faith and to leave the traditional bar industry for good to open a juice bar called Nectare in Bologna. The juice bar also focuses on raw and vegan food.

Paolo says, “There is more and more focus on a plant based diet here in Italy just like the rest of the world. The Italians also like something quick, easy and light for lunch so the vast majority of my clients are actually locals and not tourists.”

He also tells us that for the first time Italians are spending more money on fruits and vegetables than on meat, which is a very positive trend. And the focus on organic is also steadily growing.

The passionate and humble David invited me to his wellness resort where he has been helping people change their lifestyles and health for over 40 years. He works with doctors, psychologists and nutritionists. But perhaps the best secrets and advice on the subject are those found in the answers from his many interviews with  Itailian nonnas (grandmas). These women are all well over 85 and still thriving! Their knowledge has become part of his teachings.

David has recently turned his many years of research into a best-selling book “Reborn in 21 Days”, where he shares his knowledge on how important movement is for the body, mind and spirit. The book sold over 35 000 copies in Italy in its first week of release. Due to the success the book is also in the process of being translated into 21 Spanish speaking countries. Hopefully the best-selling book will also be translated into English soon!

David works both one- on- one with clients, loves to give speeches to larger audiences and is also passionate about sharing his “Healthy Habits” with companies as well.  His goal is to use his methodology to help prevent and cure, both short term and long term disease and illnesses that are due to a seditary and “modern day” lifestyle.  According to David’s research there are over 3, 5000, 000 premature deaths related to the lack of physical activity.  Luckily there are people like David wanting to help change our unhealthy habits and turn them into healthy habits one step at a time…

Change Your Lifestyle the “Healthy Habit” Way- David’s Best Tips

1.Focus on what you are gaining. To permanatly change your habits and therefore lifestyle, focus on the positiv as you are actually adding value to you life and not taking something away. This is key.

2. Find you “inner spark”. Identify your inner motivation and use that as your motivator and you will acheive longlasting results. A typical inner motivtaion factor is wanting to have the health to see your children og grandchildren grow up.

3. Learn to listen to your body. Stop looking for answers outside and turn the focus inward.

4. Forget the words “have to”! Davids daughter, who has lost 26 kg in a year using Davids methods tells us wisley, “To lose weight, don’t think about losing weight!”. You don’t have to do anything, you want to do something.

5. Slow and steady wins the race. Change one small thing every day, every week and make sure to implement it everyday and soon it will be a habit. As David says, “It takes 9 months to be born so it will at least take 9 months to change.

Healthy, Arugula, Pear and Parmesan Salad- Project Healthy in Italy.

This salad is my absolute favoritt and so easy to make!

It was the first evening of our girls weekend to Rome, Italy and by chance we discovered this lovely restaurant in an old cellar by The Spanish Steps. Luckily we got a table, and discovered quickly, we were the only tourists there. That is how you know you’re in the right place…

This is also the restaurant where I tasted the lovely arugula (rocket), pear and parmesan salad for the first time. I fell in love with the flavour combinations and just had to recreate the dish when I got home.

This salad is so yummy, healthy and easy to make!

Italians use a lot of leafy greens, and especially arugula, also called rocket. It is a bitter green which has a peppery taste and is excellent for the digestion, and therefore usually eaten as an “anti pasti”- appetizer. It gets those digestive juices flowing!

The combination of bitter, sweet, salt and sour is what makes it so irresistable and satisfying. It is also great for balancng the blood sugar and is low carb as well. I usually make ths salad as an evening meal when I’m feeling a little peckish.

 

Healthy, Arugula, Pear and Parmesan Salad ( 1 portion)

  • 2 handfull fresh arugula (rocket)
  • 1 pear
  • 1 tbs, roasted pine nuts
  • Reggiano parmesan shavings
  • Extra virgin olive oil
  • Sea salt (Maldon)
  • Lemon juice

 

How to: Roast the pine nuts (in a skillet) until golden to bring out the flavour. Wash the arugula and cut the pear into desired pieces. Shave some parmesan. Mix together with the pine nuts and sprinkle with olive oil, lemon juice and sea salt.

Will I Get Healthy in Italy or Heavy in Italy?

The struggle and fear is real… 

Living in the land of carbs, and white carbs at that, is a scary thought for me.

(Don’t know what I am talking about? Read about Project Healthy in Italy here)

As a previously overweight child and adult strugglig to keep a balanced weight and mind, carbohydrates and especially pizza and pasta, are my absolute drugs! The more I eat, the more I crave. Do you know the feeling? Also the more I eat, the more fat I gain, especially around my stomach. The more depressed I get as well. It’s a vicious cycle.

I can eat pizza ( regular wheat based) or pasta ( regular white, wheat pasta) as a serving once in a while, but if I eat more than one meal consisting of this during a day or a week, my mind and body says, “stop!”.

I feel tired, depressed, bloated, and have a really cloudy mind. My body aches more as well and I just don’t feel inspired to really do anything.

So how am I going to cope for 1 month in Bologna, Italy where the temptations and carbs are literally at every corner? And how can it really be that the Italians can stay healthy, slim(?) and be the healthiest country in Europe and the world when this kind of diet makes me fat and a generally unhappy person?

About Project Healthy in Italy

I love Italy and the Italian culture and believe I must have been an Italian nonna (grandma), making fresh pasta all day in another lifetime. It is a country so close to my heart, but yet so far away from my lifestyle and diet goals. Or so I thought…

Italy has once again been awarded the title of being the healthiest country in Europe, and the second healthiest country in the world. Italy has for years been the healthiest in the world, and just recently recieved second place with just half a point behind Singapore. (Bloomberg Global Health Index.)

The Italians live longer, are happier and have a health care system that really works in favour of its citizens.

 

What is their secret and how can it be one of the healthiest countries in the world when pizza, pasta, cheese and wine is what first comes to mind when talking or thinking about Italy?

How can it be that this wonderfully delicious but gluten-rich, carb-loaded cuisine can bring health and happiness to Italians, but if my diet consists of this in Norway, I become sick, fat and generally unhappy?

What is it that the Italians understand that both I and the rest of the world simply don’t? What have I been missing in both my personal and professional journey as a health and diet expert that the Italians haven’t?

And is the country really that healthy? Have they been able to avoid the ever-evolving problem of declining health and expanding waistlines that the rest of the world, including my own country, just hasn’t?

5 Easy Tips for a Happy, Healthy New Year.

Happy New Year everyone! I hope you had a great holiday and are ready to meet the new year head on.

Perhaps you have found yourself gaining a few pounds over the holidays and/or have fallen off the healthy wagon?

Well, have no fear; I am here to help you kick-start the new year and make 2018 your best, healthy year yet. And best of all, my tips are really easy to implement straight away!

5 Easy Tips for a Happy, Healthy New Year

  1. Start your day with 5 dl ( 2 cups) of warm water with the juice of 1/2 a lemon. This blend is so great for detoxing your liver, rehydrating the body after a good nights sleep, regulating your blood sugar, as an antioxidant and to regulate the body’s PH balance. If you get into this habit I guarantee you will have more energy, less belly bloat and a stronger immune system.
  2. Add chili to your daily meals. Adding, spicy chili is an easy way to help kick-start your body’s metabolism. It also works as a natural detoxifier and painkiller. The secret ingredient is called capsaicin and has shown promise for relieving shingles pain, osteoarthritis, psoriasis symptoms, and more. Capsaicin has both antioxidant and anti-inflammatory properties, and has also shown some promise for cancer, weight loss, and allergy symptoms
  3. Eat 1/2 avocado everyday. I love this natural fat burning fruit! Avocado has lots of antioxidants and healthy fats that regulate the blood sugar, making you fuller faster and longer. It is a great source of heart protecting vitamin E. My favourite way to eat avocados is on toast with lemon juice, sea salt and chili flakes. You can also blend the flesh for a creamy, filling smoothie.
  4. Add 1 tablespoon of unpasteurized apple cider vinegar (with the mother) to either your water, salad or other meals. Apple cider vinegar boosts your metabolisme, aids digestion, regulates the body’s PH balance, curbs appetite and is in general a cheap and effective supplement for your body and health.
  5. Drink water! I know you have heard this time and time again… but do you still avoid listening to this great and basic advice? So many people suffer from low energy, constipation, dry skin, weight gain, aches and pains just for the simple fact that their body is dehydrated. Get your 1, 5- 2 liters every day. The more active you are, or if you live in a warmer climate, the more you may need. Add lemon, lime, orange, cucumber slices or herbs to your water for a great taste.

So todays health tip is about one of nature’s best kept ” secrets”; fresh lemon juice! Yes, adding fresh lemon juice to your daily diet is one of the best ways to:

  • Curb your appetite
  • Regulate your blood sugar
  • Increase your energy
  • Help cleanse your liver and kidneys
  • Lower your foods glycemic index (when added to food)
  • Help you drink more water by adding flavour
  • Balance your body’s PH levels
  • Reduce inflammation
  • Add Vitamin C and antioxidants to your diet
  • Help with the digestion process

How to:

  • Drink a large glass of warm water with the juice of half a lemon first thing in the morning.
  • Press the juice from fresh lemons (in a juicer without the rind and skin) and add to your water through out the day. I always do this and have a full glass bottle in the fridge.
  • Use in cooking. I always add something acidic to salad dressings, soups, dips and anywhere you need to replace the need for salt and balance the flavour.

I guarantee that by adapting this easy, tasty and inexpensive habit you will really help your energy levels sore, and make you leaner, happier and healthier!
