A Leap of Faith – From Cocktails to Juice!

Paolo Scagliarini had been working in the bar industry for 20 years until one day his health was no longer on his side and he knew he had to make a change. The answer came in the form of pressing healthy fruits and vegetables.  So Paolo took a leap of faith and went from cocktails to juice!

Slow Juicing in Bologna.

I was so happy when I found this cute juice bar just right outside my apartment here in Bologna as I was really missing my fresh juice and something healthy that did not consist of bread for a quick meal.

I was lucky to meet the owner that day and went back to learn more about his venture into the juice world and his thoughts on health here in Italy. As you may know I am here with my latest project “Project Healthy in Italy”. Read more about it here

From Cocktails to Juice in Bologna. 

Paolo had beeing working in the bar industry for 20 years and starting having health issues as the focus had been on serving alcohol and chips due to his job. After a while he decided he was ready for a different focus and started learning more about vegeterian, vegan and raw food.

He started noticing a change in both his attitude and his body when implementing this kind of food and juice to his diet. He also added a slow juicer to his existing bar selling more and more fresh juice.

1 1/2 ago he decided to take a leap of faith and to leave the traditional bar industry for good to open a juice bar called Nectare in Bologna. The juice bar also focuses on raw and vegan food.

Paolo says, “There is more and more focus on a plant based diet here in Italy just like the rest of the world. The Italians also like something quick, easy and light for lunch so the vast majority of my clients are actually locals and not tourists.”

He also tells us that for the first time Italians are spending more money on fruits and vegetables than on meat, which is a very positive trend. And the focus on organic is also steadily growing.

Juice Arugula for a Better Digestion.

Do you sometimes feel a little sluggish and bloated? Sometimes our bodies need a little aid in the complex process of digesting our foods and one of the best things you can do is add the leafy, peppery arugula to your diet.

It is fantastic and even better for your digestion when juiced! Give this recipe a go.

Bitter greens like arugula/rocket are great for digestion!

 

Let’s Rocket 

Arugula, also known as rocket salad, is a leafy green from the cruciferous family. It has an aromatic peppery taste and is perfect for a healthy, green super juice! It is rich in bitters which help our digestion function better. Arugula also has four times the amount of iron compared to the more commonly used ice berg salad – so use it in your salad as well as your juice!

1 hand full arugula
1 apple (preferably a sweet tasting one)
1/3 lemon
1/5 zucchini
1/5 cucumber

Juicy goodness: The bitters in arugula kick start the digestion juices in your stomach helping your body better digest and absorb nutrients. It also triggers the releases of bile into the small intestine. The leafy green is also rich in vitamin B, zinc, copper, vitamin A and C, iron, calcium, magnesium and potassium.
Juicy tip! Arugula is low in oxalic acid, an acid which can hinder the body’s ability to absorb calcium. This makes arugula a perfect substitute for spinach which is high in oxalic acid and is an important factor to remove from the diet for people suffering from osteoporosis (brittle bones).

 


Happy Heart Juice! Juice Yourself to Lower Blood Pressure.

Happy Heart Juice! (Serves 1)

Fresh beets are one of the best vegetables you can juice- both taste wise and health wise. When it comes to taste, it is naturally sweet. Regarding the health benefits, it is known to be a natural blood pressure remedy due to the nitrates found in the raw juice. It may also be a performance enhancer, as it has shown to reduce the body’s rate at which it uses oxygen when exercising. This results in you tiring less easily. Get your beets on!

Fresh beet juice is nature’s finest remedy for high blood pressure and low energy levels.

 
3 cm/ 1-inch thick fresh pineapple slice
2 medium beets
1 hand full spinach
3 cm/ 1-inch large piece ginger
½ lime

How to: Wash the produce, leaving the skin on as a lot of the nutrients are located directly beneath the skin. Press using a juice machine/slow juicer.

Juicy goodness: Enzyme bromelaine, nitrates, iron, vitamin C, gingerols, magnesium and potassium.

5 Easy Tips for a Happy, Healthy New Year.

Happy New Year everyone! I hope you had a great holiday and are ready to meet the new year head on.

Perhaps you have found yourself gaining a few pounds over the holidays and/or have fallen off the healthy wagon?

Well, have no fear; I am here to help you kick-start the new year and make 2018 your best, healthy year yet. And best of all, my tips are really easy to implement straight away!

5 Easy Tips for a Happy, Healthy New Year

  1. Start your day with 5 dl ( 2 cups) of warm water with the juice of 1/2 a lemon. This blend is so great for detoxing your liver, rehydrating the body after a good nights sleep, regulating your blood sugar, as an antioxidant and to regulate the body’s PH balance. If you get into this habit I guarantee you will have more energy, less belly bloat and a stronger immune system.
  2. Add chili to your daily meals. Adding, spicy chili is an easy way to help kick-start your body’s metabolism. It also works as a natural detoxifier and painkiller. The secret ingredient is called capsaicin and has shown promise for relieving shingles pain, osteoarthritis, psoriasis symptoms, and more. Capsaicin has both antioxidant and anti-inflammatory properties, and has also shown some promise for cancer, weight loss, and allergy symptoms
  3. Eat 1/2 avocado everyday. I love this natural fat burning fruit! Avocado has lots of antioxidants and healthy fats that regulate the blood sugar, making you fuller faster and longer. It is a great source of heart protecting vitamin E. My favourite way to eat avocados is on toast with lemon juice, sea salt and chili flakes. You can also blend the flesh for a creamy, filling smoothie.
  4. Add 1 tablespoon of unpasteurized apple cider vinegar (with the mother) to either your water, salad or other meals. Apple cider vinegar boosts your metabolisme, aids digestion, regulates the body’s PH balance, curbs appetite and is in general a cheap and effective supplement for your body and health.
  5. Drink water! I know you have heard this time and time again… but do you still avoid listening to this great and basic advice? So many people suffer from low energy, constipation, dry skin, weight gain, aches and pains just for the simple fact that their body is dehydrated. Get your 1, 5- 2 liters every day. The more active you are, or if you live in a warmer climate, the more you may need. Add lemon, lime, orange, cucumber slices or herbs to your water for a great taste.

There are a lot of health benefits from drinking tea, as long as you choose the right one, and one of good quality. I recommend skipping adding extra calories from sweeteners, but if you need anything other than fresh lemon juice read my blog post about healthy sweeteners here

Green tea-  Is made with steamed tea leaves.  It has a high concentration of EGCG, the “holy grail” of immune strengthening components. It may prevent cancers like bladder, breast, lung, stomach, pancreatic, and colorectal cancers, prevent clogging of the arteries, burn fat, counteract oxidative stress on the brain, reduce the risk of Alzheimer’s and Parkinson’s diseases,  the risk of stroke, and improve cholesterol levels.

Black tea- Is made with fermented tea leaves.  Black tea has the highest caffeine content and forms the basis for flavoured teas like chai, along with some instant teas. This tea may protect lungs from damage caused by exposure to cigarette smoke. It also may reduce the risk of stroke.

White tea- Uncured and unfermented. It has lost of antioxidants and has shown to have  the most potent anticancer properties compared to more processed teas. It is also used in skincare products.

Oolong tea- Is rich in antioxidants and may lower bad cholesterol levels. Some oolong teas may help with weight management.

Pu-erh tea- Is made from fermented and aged leaves. It is considered a black tea and its leaves are pressed into cakes. May help balance weight and reduce LDL cholesterol.

Matcha tea- This is the Queen of all teas! It comes from Japan and with matcha you drink the entire tea leaf and not just the extract of it. Matcha tea is packed with antioxidants including the powerful EGCG and it may boosts metabolism. It is known to  detoxify the body and is rich in fiber, chlorophyll and vitamins. It provides vitamin C, selenium, chromium, zinc and magnesium. It may also lower cholesterol and blood sugar.

While I love herbal teas without caffeine like Pukka, keep in mind that herbal teas are not really “tea”, but of course have other health benefits and may be enjoyed as well.

Protect Your Body with Strawberries

I love strawberries! They are one of my favorite sweet snacks and when the stores fill up with this berry it is a sure sign that summer is on its way, especially here in Norway.

Strawberries taste great, but are also a great source of antioxidants.

 

 

Strawberries are a powerhouse full of antioxidants and may help fight cancer due to the high content.

Strawberries may also:

  • Reduce the risk of cardiovascular disease by preventing platelet build-up and reducing blood pressure via anti-inflammatory mechanisms.
  • Help to lower homocysteine levels, an amino acid in the blood associated with damaging the inner lining of arteries.
  • Act as a natural anti-inflammatory due to the quercetin content.
  • Protect against stroke due to anti-inflammatory antioxidants.
  • Lower blood pressure due to the high potassium content.
  • Help against constipation due to the high fiber content.

Strawberries are also a low glycemic fruit making them an ok choice for diabetics as well. Make sure to choose organic if you can or wash conventional strawberries in a water and vinegar solution to wash off some of the pesticides.

Enjoy them with fresh basil and a good balsamic vinegar for a healthy and exciting treat:)

 


Red Velvet Juicesmoothie!

 

This juicesmoothie is bursting with natural goodness! It’s red and purple pigments are natures antioxidants and just by looking at it you can tell that it is loaded with cancer fighting and anti-aging properties. Red cabbage is simply one of the healthiest cruciferous vegetables you can eat and juice, and when mixed with raspberries- it tastes fantastic as well.

  • 1 apple
  • 1, 5 inch thick red cabbage
  • 1/3 lemon with rind
  • ¼ pineapple
  • 1 carrot
  • 1 tbs. cold pressed organic flaxseed oil
  • 1ts. Wheatgrass powde
  • 1 hand full frozen or fresh raspberries

 

Juicy how-to: Juice all ingredients except raspberries, oil and wheatgrass in a juicer. Pour the juice together with the remaining ingredients into a blender and blend until smooth. Enjoy!

 

 Juicy goodness: This juicesmoothie is full of antioxidants known as phytochemicals, fiber, vitamin C, healthy, fat burning fats, chlorophyll and beta-carotene.

 

Juicy tip! Can’t get a hold of red cabbage? You may use green/white cabbage or even kale instead.

 

 

 


Super pear juice!

The humble pear is a delicious fruit and is also a great source of fiber. Pears are also great for juicing! They contain pectin which is a soluble fiber that acts as pre-biotic in the intestines. These pre-biotics feed the healthy gut bacteria which results in an overall better digestion and health, and best of all, the soluble fibers are also contained in your fresh juice. These fibers are the reason your juice will be a little thick.

Pears give a great taste to any juices, especially recipes containing greens and other vegetables. For best results when juicing make sure you choose a pear that is hard and not soft and mushy as this will not juice well at all and are better for blending.

Super pear juice!

  • 2 pears
  • 3 cm piece fresh ginger
  • 1/2 lime
  • 1/3 zucchini
  • 1 large carrot

How to: Wash the produce and juice with skin on in a juice machine, preferabaly a slow juicer. Drink within 30 minutes.

Juicy goodness: Vitamin C, pectin, potassium, calcium, iron, gingerols, vitamin A, B vitamins, organic water.

Juice Yourself Healthy!

I love juicing and it has really turned both my health and career around. I discovered juicing for about 7 years ago and when I added just one or two juices to my diet my energy levels sored, my digestion became so much better and cravings for sweets disappeared.

Did you know that a humble little apple contains cancer- fighting malic acid, anti-aging quercitin, B vitamins, vitamin C and so much more? Kale may help us fight cancer and ginger and beets help detoxify the liver and blood. Nature  has the answers to our health problems…

Depending upon which country you live in, the government recommends a certain portion of fruits and vegetables to be consumed every day. In Norway and most other European countries it is recommended to eat at least “5 a day” which consist of 2 fruits and 3 vegetables. Asian countries have traditionally shown lower rates of cancer, particularly breast cancer and prostate cancer which are typical lifestyle diseases related to what we eat and how we live.

By juicing your fruits and vegetables on a daily bases it is so easy, tasteful, and quick to drink broccoli, sprouts, ginger, lemons, apples and so much more. And I personally guarantee it will give you such an increase in your life quality. It will simply make you burst with energy!

Juicing also releases more of the nutrients “locked” within the pulp and underneath the skin of the produce so when juiced all of this is released ensuring your juice is full of cell building nutrients. Juicing is also a great way to ensure your children’s diets are healthy and that they receive the correct building blocks (together with omega 3) for healthy brain development and to build a strong immune system preventing disease.

Remember that allergies and food intolerances are a growing problem in our society and we have the power to both reverse and prevent them through our diet and lifestyle. Give them fresh pressed juice every day and they will be well prepared for a long and healthy life.
